		<description>Nitrites have long been a concern of mine.  I live in Australia and have been buying organic meat for some time, however I am now wondering why organic meat looks so fresh and red if they are not using nitrites??  Shouldn&#039;t it have a more grey tinge to it?</description>

Organic sources of nitrogen primarily come from things like compost, fish emulsion, vegetable meals, feathermeal, and composted manure.  These sources of nitrogen are less susceptible to leaching into the environment than synthetic sources, such as ammonium nitrate, ammonium sulfate, or urea.  Studies have also shown organic farming produces food that has less nitrate levels than their conventional counterpart.  In addition sodium nitrates are not allowed in organics for the preservation of meats.  So if the study above holds true, it&#039;s a big plus for why you should buy organic food.
